This is a meal for any time of day. The yellow yolks contrast from the bright green brussel sprouts and a dash of cayenne pepper give it a culinary kick. This was the specialty of one of our favorite local restaurants.
Ingredients
- 2 doz. brussel sprouts
- 4 large eggs
- 1 onion
- 2 tbs oil
- salt
- cayenne pepper or paprika
Directions
In large skillet, heat oil. Trim and halve the brussel sprouts. (This is the most time consuming part). Add brussel sprouts to skillet and cover. Stir on occassion so they don’t stick. Add oil if needed. When bright green and just short of sticking to pan, remove to plates. Add additional oil and add four eggs. Cook until yolk is desired consistency. Place eggs on top of brussel sprouts and add a dash of paprika or cayenne pepper.
Notes
Serve with toasted bagel or English muffin and seasonal fruit.
